How to Cook

Turn the hob on to a medium/high temperature and pour the oil into a medium sized pot

Add the leeks and cook for a few minutes until softening, stirring occasionally

Stir in the mushrooms & salt, then stir in the tofu & seaweed. Next, turn the hob temperature down to a medium heat

Stir in the watercress & beansprouts and cook for around 2 minutes

Pour in the shoyu & ginger juice, stir & cook for around 2 minutes so it reduces slightly, then turn the hob off & serve
